Healthy Living Recipe - Energy Bursts

Perfect for an on-the-go treat with a cup of green tea, these energy bursts are a power snack containing protein and fiber to balance energy levels and hunger. Variation #1: Carrot Cake Energy Bursts
These carry a hint of pumpkin pie spice, just in time for the flavors of fall. Coconut contains healthy fats and fiber with less sugar.
Ingredients:
- 2 carrots
- 1 cup raw almonds
- 1 cup raw walnuts
- 6 dates
- 1 teaspoons vanilla extract
- 1/4 cup oats
- 1 tsp pumpkin pie spice
- 1 tsp raw honey
- 1/4 cup shredded coconut for rolling
Variation #2: Cacao Energy Bursts
Add a chocolate twist! Cacao is an excellent source of antioxidants (especially those called “flavonoids”), giving a great nutritional boost to these yummy date balls.
Ingredients:
- 1/2 cup cacao chips/nibs
- 1 cup raw almonds
- 1 cup raw walnuts
- 6 dates
- 1 teaspoons vanilla extract
- 1/4 cup oats
- 1 tsp pumpkin pie spice
- 1 tsp raw honey
- 1/4 cup shredded coconut for rolling
Method:
Place all ingredients into a high-speed blender or food processor. Blend until you see all ingredients are a large crumb size. Form the mixture into two tablespoon-sized balls and roll in coconut. Makes 16 servings of two energy bursts. These can be stored in an airtight container in the refrigerator and also freeze well.
