Recipe: Chocolate Chip Zucchini BreadRecipe: Chocolate Chip Zucchini Bread

Slice up this healthy and delicious loaf for breakfast, dessert or afternoon snack

Jody Bergeron, RN, a nurse at Falmouth Hospital, is a science-based nutrition and health writer/blogger. One of her recent blogs highlighted the benefits of zucchini and featured a recipe for chocolate chip zucchini bread. We thought this would be the perfect recipe to share that is both healthy and delicious! But first, Bergeron serves up some quick zucchini nutrition facts:

  • Zucchini is a veggie, but botanically it is a fruit. It is also known as a courgette. A one cup serving provides 40 percent of Vitamin A, which supports the immune system.
  • Zucchini also provides water and fiber to promote healthy digestion. Fiber also helps to stabilize blood sugar levels.
  • Zucchini has antioxidants: Vitamin C, Vitamin A, lutein, B-carotene and zeaxanthin
  • Dark chocolate, one to two squares, 70 percent or higher is loaded with polyphenols and zinc to boost immunity.

Also, try roasting or grilling zucchini to add to pasta or pizza or shredded into smoothies, muffins or meatloaf. Sounds like a win-win for everyone!

Chocolate Chip Zucchini Bread Recipe

  • 1 cup whole wheat pastry flour
  • ¾ cup all-purpose flour
  • 1½ teaspoon baking power
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • ¼ teaspoon cardamom
  • 1/8 teaspoon ginger
  • ¾ cup brown sugar
  • 2 eggs
  • 1/3 cup avocado oil
  • ½ avocado
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini lightly squeezed to remove excess moisture
  • About 1 cup dark chocolate chips

Directions

Preheat oven to 350 degrees.

Blend dry ingredients in a bowl and purée wet ingredients in a blender. Mix both together with the zucchini and pour into loaf pan. Bake for 40 to 50 minutes or until toothpick comes clean.
